BROOKSVILLE – The Bonefish Grill restaurant chain has expressed an interest to building department staffers about opening a site at the new Cortez Commons plaza outside of Brooksville.
Peter Creighton, partner with Huntley Properties LLC, which owns the property, said he has no knowledge of any commitments. Right now, the company is working with Hernando County to secure the necessary approvals in the process. The zoning is in place.
“I would expect that in 90-120 days there will be more certainty as to what’s going on and more commitments from retailers as to who will be a part of that project,” Creighton said. “We would welcome any type of retailer that would benefit the citizens of Hernando County.”
Bonefish Grill’s parent company is Tampa-based Bloomin’ Brands,’ which also operates Outback Steakhouse and Carrabba’s Italian Grill.
There is a Carrabba’s almost across the street from Cortez Commons, where Bonefish is inquiring.
The 20 acres is divided into two properties, with access off S.R. 50 and Mariner Boulevard. The tract wraps around the CVS drug store.

The Philadelphia-based chain had inquired in April about a tract on the southeast corner of Spring Hill Drive and Anderson Snow Road, across from Publix.
Wawa representatives had attended a pre-application meeting, a preliminary step in the process where the company explores the roads, utilities and other infrastructure on the site.
Beacon Theatres has resubmitted plans to the county, addressing some of the concerns on the building plan.
The county building department in March received its first set of building plans for the creation of a new large-screen-format theater to be added on to the Beacon Theatres at State Road 50 and Mariner Boulevard.
A review team consisting of officials from county utility, engineering, building, fire and zoning departments went through the plans and made revisions.
The county has issued Burger King a permit to begin construction on an outparcel at Western Way Plaza, at the intersection of S.R. 50 and Mariner Boulevard.
